Do you mean voice in a classical context or just the VERY broad subject of Voice.

In general vocal music is broken up into two categories solo and choral.
Choral music is perhaps the oldest (recorded) vocal music. There are songs from before the Renaissance period that are written for choirs.

During the Renaissance, most music written for voice was choral, much of it being Oratorio (http://en.wikipedia.org/wiki/Oratorio) which also had a lot of instrumentation and also solo voice. (Think Handels Messaih)
A good example of Renaissance vocal music is Gibbon's Madrigal the Silver Swan

As you move into the baroque period, more solo voice is seen. Opera was popularized..

In Opera a new style began to emerge in the 17th and 18th centuries. It was similar to Baroque (with a focus on Ornamentation) but was much more "fancy," This period is known as the Bel Canto period, and is usually known for large focus on a beautiful sound rather than emotion, or drama. Composers like Rossini, Bellini and Donizetti are famous composers of such opera's

In the late 18th century Bel Canto (which was primarily Italian) became less popular, and was replaced by Classical opera. This was often in German as it was poularized by Wagner.

Then came the romantic period... This was usually known for being dramatic and romantic... practically tragic.
Composers from this period that come to mind are Puccini, Leoncavallo and Bizet.

Then there is also contemporary opera.



Other Genres developed from the common people.
Like Gospel, Blues and eventually Jazz all originated from slaves.

They sang about what they were going through and then the other music came from there.
To see the difference between Jazz and Blues just research that briefly, it is quite obvious really.

Other contemporary Styles developed from these three.

Vocal development comes from training. This can take years particularly in opera.
